Sweet potato hash

Here’s my go-to sweet potato recipe. Fairly simple, minimal ingredients, and healthy. Sweet potatoes are a great alternative to regular potatoes because they’re known to have “good carbs”, and they are also much better for digestion due to their fiber content. Note: my potatoes do not turn out very crispy, but, I still think they’re yummy.


makes 4 servings

  • 10 small sweet potatoes
  • 1/4 cup olive oil
  • 4 tbsp. black pepper
  • 2 tbsp. lemon pepper
  • 1 tbsp. dried parsley flakes
  • 1 tbsp. Italian seasoning
  • 1 tsp. red pepper flakes
  • 1 tsp. garlic powder
  • 1 tsp. pink himalayan salt


  1. Preheat oven to 425°f
  2. Peel the potatoes; gently wash
  3. For each potato: slice in three sections length wise, then chop into small square-like pieces and place in large bowl
  4. In a mixing bowl, whisk together olive oil and seasonings (excluding the dried parsley flakes)
  5. Pour mixture over potatos in large bowl; toss
  6. Line a baking pan with aluminum foil; spread potatoes evenly across the pan
  7. Sprinkle dried parsley flakes on top
  8. Bake for 30 minutes
  9. Remove; let cool for 20 minutes
  10. Serve with ketchup/mustard/anything your heart desires
